I think both Miguel and I assumed you were talking about changing the colour of
the text itself, but now that I thought about it more and tested, it seems you
are talking about character highlighting colour. If I change the highlighting
colour of black text to some dark tone, the text colour changes to white in
order to adapt to the contrast requirement. This is intuitive behaviour that
preserves readability (consider people with low vision as well). So if you want
to stop this behaviour, then indeed set the text colour explicitly.
