This is the purpose of the "Update"-icon:
If the option "Update" is on, then the fields in the 3D-Effects dialog are
filled with the current settings of the 3D-object, when you click on an
3D-object.
If the option "Update" is off, the fields in the 3D-Effects are not changed
when you click on an 3D-object.

You need this option, when you want to transfer the settings from one 3D-object
to another. Steps: You have "Update" on and fill the dialog fields with the
settings of the source object. Then you set "Update" off. Then you select the
target object and click on "Apply".
That is the only way to transfer settings from one 3D-object to another I know.
The format-paintbrush tool does not work for 3D-objects.

The 3D Effects dialog really is in need of an update. But the options are so
complex that a new dialog should not be implemented without very careful
planning first. Please include me in such considerations if such an update is
actually to be carried out.(In reply to mzaams from comment #0)
