We know the toggle for the default 'Automatic' between System | Light | Dark corrupts the color scheme when you select Light, while os/DE is in a Dark color sense. That's been corrected for 25.8 but for now, please use the 'Add more themes' puzzle piece icon and install the 'Light Application Color' extension--designed to render UI as builds prior to 25.2 release. Or, try one of the other Appearance themes. With an Appearance theme installed, the Light and Dark radio buttons on the Tools -> Options -> Appearance panel will behave to toggle the UI between Light or Dark color scheme as defined within the theme extension--the new themes define both. Unfortunately, and fixed for 25.8, once you move UI off of the System RB it is irrevocably corrupted and can only be restored by profile deletion.
