I noticed this too. It makes it difficult to Pin a document because you don't
know when and where it'll show up.

I could recreate the situation with the following steps:

1. touch abc{01..15}.ods; touch def01.ods
2. soffice --safe-m=-ode abc*
3. Close the 15 windows, so I'm on the Start Center
4. Pin abc01.ods
5. Grab the corner of the window to resize 

This particular time, the vertical scrollbar disappeared and documents abc12-15
were not visible in the Start Center (pls see image). They were visible in the
menu item "File" > "Recent Documents".

6. Now, "File" > "Open" select def01.ods. Close the file. The file appears in
"File" > "Recent Documents" list but not in the Start Center. Stop and restart
libreoffice and the file still does not appear in the Start Center.

A related item:

I would expect the menu item "File" > "Recent Documents" > "Clear List" to
behave the same way as the Start Center's "Actions" button > "Clear Recent
Documents". They currently do not. 

The menu item "File" > "Recent Documents" > "Clear List" in addition to
clearing recent documents, also "cleared" pinned thumbnails in the Start
Center. It's a refresh/visual thing, because touching the "Filter" drop-down
"All Documents" (original value) refreshes the Start Center and displays the
pinned documents.
