By default it follows the os/DE color sense (for light or dark theme) as previously, but also implements extension based color theming for the user interface. Use the Tools -> Options -> Appearance panel and use the "Add more themes" button (the puzzle piece icon) to select a theme. If you'd like an appearance like the previous UI, install and select the 'Light Application Color' theme. Allow the offered Restart LibreOffice. Note: do not change the Radio buttons from System, Light or Dark with just the 'Default' os/DE provided theme is active.
