Instead use a curated appearance theme. Editing the Tools -> Options -> Appearance in its default (os/DE color theme) at 25.2 is not working correctly and has some nasty behavior, leave it set to System and avoid having to reset profile to restore defaults. Use the Tools -> Options -> Appearance panel and use the "Add more themes" button (the puzzle piece icon) to select a theme. If you'd like an appearance like the previous UI, install and select the 'Light Application Color' theme. Allow the offered Restart LibreOffice. By default it follows the os/DE color sense (for light or dark theme) as previously, but also implements extension based color theming for the user interface. Also do not change the Radio buttons from System, Light or Dark when using the 'Default' os/DE provided Automatic values theme.
