Problem solved, it is NOT a LibreOffice bug:

I searched for information about how to configure LibreOffice's UI, and found
"LibreOffice"→"Preferences…": "LibreOffice"→"Advanced"→"Open Expert
Configuration": "Expert Configuration". After searching for "font" in
"Preference Name", Chinese characters are not displayed here as expected, but
Korean characters are displayed (see "LO6….png").

I then checked the font names configured for Chinese "UI_SANS". From the ones
having latin names, most are not available on my Mac, or did not contain
Chinese characters. But "PingFang SC" is available and does contain Chinese
characters, but was uninistalled on my wife's Mac (unknown why, when, by whom,
because "PingFang HK", "PingFang MO" and "PingFang TC" are istalled!).

After reinstalling "PingFang SC" and restarting LibreOffice, Chinese characters
are displayed in dialogs and in the "Presenter Console" normally again.

@Saburo: The "UI_SANS" font names are used for the "Presenter Console", too.

So it is not an LibreOffice bug, but it was "just" a missing font.
