Can not confirm on Win11 (win32 x64 build).

As Jumplist, the correct icon appears for each LibreOffice module (swriter.exe,
scalc.exe, etc.) on the Win11's taskbar, also as Jumplist on the Win11
Startmenu. With options to pin if desired.

It could be issue with ARM builds (AARCH64) when running in os/DE Dark color
theme, or could be a user profile issue corrupted by the multiple installations
and UI "adjustments" OP reports in the LO Ask thread.

To get user profile back to know defaults, and detection of os/DE color theme,
delete the profile--it should rebuild with defaults. Details should be here:

Please backup/rename or just delete existing profile and allow it to rebuild.

Let us know if the default UI configuration does not restore visibile icon
themes.
