Hello - I am on MacOS 15.2 and wanted to experiment with this as well. I noted
that there's quite a few security restrictions that slow this process down.

1. Even after changing the default application as Andrew noted, I still
received a message that "Apple could not verify this app is free of malware..."
which only gave options for "Done" or "Move to Trash"
2. Right-click open, and ctrl-click open didn't do anything different.
3. After receiving the message in step 1, I was able to go to Settings ->
Privacy & Security. Toward the bottom under "Security" an option for
"LibreOffice was blocked to protect your Mac" should have a choice for "Open
Anyway". After selecting this, I was able to get LibreOffice to open as
expected with double-click.
