Then on next a launch, go to Tools -> Options -> Appearance and from the "Add more themes" button a 'Extensions: Color Themes' dialog will open. Install the theme "Light Application Colors". It will then be available in the LO themes list box, select it and OK out. LibreOffice will prompt to restart.
