For the 25.2 release, users on os/DE Dark color scheme must apply an appearance theme extension to retain pre < 24.8 UI appearance. See the release notes. You'll want the 'Light Application Theme' extension, the appearance extensions marked as => 25.8 will not work with the 25.2 release. https://extensions.libreoffice.org/en/extensions/show/99268 And, defaults for appearance theme handling was refined further at the current 25.8 release.
