Differs depending on the recent builds of LibreOffice. Prior to and until the 24.8 release it was done from Tools -> Options -> Application Colors panel and scrolling to the 'Spreadsheet' section and uncheck the 'Text overflow' box, and a different color could be selected if preferred. At the 25.2 release, it was moved to the Tools -> Appearance panel from the 'Customizations' list box. But you must first enable customizations by applying an appearance theme. Then from the customizations, select the 'Calc Text overflow indicator' and use the 'Show in document' check box that is below the color selector. At the 25.8 release, and for the future 26.2 release, an appearance theme is not necessary, and simply use the customization list box from Tools -> Options -> Appearance.
