Some fonts replace -> with an arrow at the font level using ligatures, for
example Adwaita. Could it be that the document you are copying from is using
one of these fonts? That would explain why copying and pasting from the
document causes the arrow to be copied because it would also copy the font. If
that is the case then you could detect it because with those fonts it is
possible to put the cursor in the middle of the arrow, ie, between the joined
up - and >. You could also try Paste Special -> Paste unformatted text to avoid
copying the font formatting.
