Although this could be an interesting feature, it would require adding mermaid JavaScript library to LibreOffice, and there are many similar libraries out there. For example, this pandoc extension supports "Mermaid, Dot/GraphViz, PlantUML, Asymptote, D2, CeTZ, and TikZ". https://github.com/pandoc-ext/diagram In the above link, you may see that pandoc is providing this feature as an extension, and users should install the requirements as external applications.
