The recommended way to set the default language for a document according to the
help is to click Tools->Options and use the “For the current document only”
checkbox.
This seems like a really weird place to have the option because all of the
other options in the Options dialog are global settings that don’t affect the
current document. Perhaps it would make more sense to have this setting in
File->Properties so that it is like a property of the file.
Alternatively (or additionally) it might be nice to have a way to set the
document language by clicking on the current language in the status bar at the
bottom of the window.
