You might not start with a maximized window, but, given that the Start Center turns into the document you're opening with the same window size, the window will have to be somewhat large sooner or later. BTW, when reporting UX bugs, please state the problem you have in the title [1] (e.g. "Opening recent documents isn't fast enough" or "The thumbnail grid is harder to read than a list") so that we can find the ideal solution. In this case, I'm thinking an additional List view would help.
