I'm hesitant to group both problems together into a single bug. Let's focus on
just the hyphenation problem for now.

One bug per issue, please.

Aha! These look like good, short repro steps.

I think that could be a good enhancement. Please file that as a separate
(enhancement) bug report.

Which menu? How does one navigate to the Extra -> Language menu?

I agree that Font and Language settings in Format -> Cells should be clearer.
Perhaps separate tabs? Please file a separate enhancement request for this
feature.
