What file format were you using for saving?

Were you embedding the files or just linking to them?

AFAIK, there's no limit on the size of ODF files or included files that would
be close to the size of a few scanned images. Just for reference, how many MB
of media do you think you added to the document?  (rough estimate is fine)

How big is your graphics cache?
(Tools -> Options -> LibreOffice -> Memory)

If you're working with many large images, bumping up the cache can help speed
up LibreOffice for you
