I won't make the claim that there might not be some odd formatting values setup, but most of them came from whatever was the default template back when I started with these document (especially the bullets -- all I did was select different ones for each level, not changing any font value). I've had it happen with other fonts as well, so it's not just the Ubuntu one (which was a thought I had as well). If I load up a Master Document with ALL of my files (which ends up being like 600+ pages), I can get it happen fairly quickly now. What odd, is that it will only happen on certain style changes. If I change the font/size enough times, it will happen. Then I can change to something else as it will work. Then back and forth and it will keep happening.
