You can see them in the shortcut configuration window if you click on the LibreOffice radio button top right of the window. ctrl+K seems to be defined by default since LO 4.2 (not defined on my 4.1 and 4.0 versions). On LibreOffice 5.0.3.0+, menu Edit > Hyperlink, menu Insert > Hyperlink, ctrl+K, right-click > edit hyperlink open the same dialog if applied to an existing hyperlink.
