Tomorrow I've donwload a pre-release version of LibreOffice 5.1 and in the "About" windows there is the new logo. So this "issue" is solved. About the start center (center not screen, please excuse me), I really don't know it is rendered in a different way compared to Windows and Ubuntu. I think could help ask something about that to a member of the design team on the Mac. P.S. My screen is not hidpi.
