Ok, so I read the help:
https://help.libreoffice.org/Common/Options_3#When_in_Writer:_Apply_Styles
"type the text that you want to use as a heading (without a period), and then
press Enter twice"

I always used a period, so didn't see the change.

I confirm that the style changes to Text Body from Default Style.

As this behavior is not documented and therefore seems to be incorrect, I'll
change this to NEW.

There is also bug 90507, which is about everything changing to Text Body, if
you do Format - Autocorrect - Apply. I confirmed it happens even if "Apply
styles" option is not selected.
