Data -> Validity can be used to set a validation check for fields. "Cell range"
means that validation is done against a set of values taken from a range of
cells in the sheet.

This also acts as an input help (if "Show selection list" is checked), and the
mentioned setting "Sort entries in ascending order" refers to whether the
entries are sorted in the input help, the source fields aren't supposed to be
changed by it. Note that if you set "Show selection list", you will see a black
arrow next to the cell (the one(s) you set the validation check for), which
shows the input help.
