Can not reproduce with this dual 1080p setup. It could be LO handling of the
dual HiDPI monitors, or could be the OS/graphics card--unfortunately your set
up will not be common.

Otherwise, a few questions regards this report.

You say "menus" and "sub-menus", please give a specific that consistently
faults so we can retest.

And to be clear no toolbars or dialog windows are similarly affected--just the
main menus and and any cascading sub-menus?

Also, when you say "go blank" does that mean the window frame is still visible
but nothing is rendered inside it? Or does it simply close?

For testing you can rename your LibreOffice profile, found at 
"%APPDATA%\LibreOffice", and retest--a new profile will be created. You can
name the original back to restore it, or can copy over configurations to the
new profile after testing.
