Hi Jay,
can you attach a screenshot of the setting that can not be changed to your
desired color. And also please attach a screenshot of the "print color button"
which you are using to adjust that setting.
You could try the fresh release of LO and see if that changes anything for the
better: http://www.libreoffice.org/download/libreoffice-fresh/

Does the problem persist after that?
