PDF export uses properties filled in File > Properties.
If you define the title, the subject and the keywords, then export as PDF:
1/ open the PDF in Evince,
2/ File > Properties
=> Evince shows the properties you filled in LibreOffice.
So closing as WorksForMe. Please feel free to reopen if you disagree.
