In Writer, go to Tools > Options > LibreOffice Writer > Basic Fonts (Western)
and change the default there.
For templates, File > Templates > Open Templates... and the dialog that shows
up (admittedly we do not ship many templates but you could save your own).
Default font since 6.0 is DejaVu, by the way.
And last but not least you can ask questions about how to use the program at
ask.libreoffice.org in English or your language.
