Just a guess:
The bug (sometimes) happens if you disable lock files (Tools > Options >
LibreOffice > Advanced > Open Expert Configuration > Search for UseLocking and
set it to False.)
>From the time I turned this setting to its default state (i.e. True), I have
never experience the described bug again.
