For the menu under gtk3 that would be possible, was you write.
Alternatively, under file we could have two entries:
Recent Documents
Recent <XYZ> Documents
Two columns or two menu's seems impossible for the start center.
What about the next?
File
Recent Documents
[] Current document type only
- - - -
<file 1 >
<file .. >
Which of course should retain the chosen setting..
