The Default Paragraph Style (and all derived styles) change the language (you
find it under Font) to your default. The language at the cursor is shown in the
status bar - and you can change it there as well, just click it.

Maybe I missed this point. But what exactly is different at Impress? Main menu,
tools > options, sidebar, some properties, statusbar...
