Did you try change they font smoothing style in TinkerTool?
Look like kind subpixel hinting problem (Windows ClearType). And old style
makes changes to they subpixels.
They letters are simply very thin.
Alternative maybe changing they default UI font. But only fiddled with that on
Windows. Not sure how that can be done on macOS or even only for LibreOffice
