This is indeed a very odd problem, but I can assure you it is not a general LO
/ macOS 11 Big Sur problem as many users are not experiencing this problem,
suggesting it is limited to your specific setup.
Could you uninstall LibreOffice and reinstall 7.1.1.2. Ideally use an
uninstaller like the free AppCleaner to get rid of all preferences files.
Does Libreoffice then open as expected?
And if it does not, could you install LibreOffice nightly build and see if the
problem persists using that build:
