I have this exact problem. My system XUbuntu 21.04 up to date, LibreOffice
7.1.3.2. Using packages fonts-dejavu-core fonts-dejavu-extra 2.37-2build1 this
problem appears as described by Nick Levinson - the pdf on my system appears
normal when viewed with Atril document viewer, but when I load the pdf on my
Sony EReader the fonts are degraded as described. Downgrading to
fonts-dejavu-core and fonts-dejavu-extra 2.37-1 fixes the issue. 

Perhaps the Dejavu Italic fonts are not properly exported to be embedded in the
pdf and a substitution is happening? That might explain why printing from the
system matters as to be able to see this problem.
