Having document-specific properties in Options is plain wrong. People should not be expected to look for such options there, and you will not find a "this is intuitive" reason for such placement; no "UI simplification" is an excuse for that. In case when there are defaults (suitable for Options dialog), they should be limited to the "defaults" in Options, and should never suggest to also/alternatively modify current document's properties.
