I went to Insert -> Other -> Variables and used Set Variable to create a new variable myVar with text "variable text". Then I followed your steps. Insert -> Fields -> Other -> Variables -> ShowVariable, and clicked Insert. It worked on inserting "variable text" or the name myVar, depending on which I selected. It worked for the Header and Footer. If this is not what you meant, could you please clarify?
