You can check this for anonymising: https://wiki.documentfoundation.org/QA/Bugzilla/Sanitizing_Files_Before_Submission It would be nice to test an example file. As documents can have many different features, the slowdown can be due to some very specific thing. Also, are you running a Wayland session on Linux?
