As you found--applying Direct Formatting does not affect the defaults applied from template. For a current document--i.e. opened with default template, you need to modify the Table Contents style. And from its 'Organizer' tab set its to inherit from none, and then set its Font tab as needed. The change will persist for this one document. To reuse the changed fonts for multiple documents you need to save those changes as a new template, and then use that template (rather than the default template) when creating new documents that use the changed font.
