Been tinkering a bit more and found a resolution - it might be that polish
language package that installed in typical installation was faulty. I've
re-started installation file and installed English (UK) additionally.

After launching LibreOffice in Safe Mode, changing the language to English and
then disabling graphical acceleration, I am able to launch LibreOffice using
standard executable or associated file.

Workaround steps:
1. Start installer of LibreOffice 7.5.0
2. Select "Modify"
3. Install English (UK) language pack.
4. When installation completes, start LibreOffice in Safe Mode.
5. Navigate to settings.
6. Change program language to English (UK)
7. Select restart of the program in safe mode.
8. When in safe mode again, select "Disable graphical acceleration"
9. Select apply changes and restart

This way I was able to launch the program 3/3 times outside safe mode, by going
to English (UK) rather than default installed Polish language pack.
