Well, I choose automatic mode in the macOS appearance preferences plus the option via Tinker Tool to limit dark mode to menu and dock only. So during the evening I still have white window background, but dark menus and dock. For now I reverted this this option via Tinker Tool and chose light mode in the macOS appearance preferences. With these settings the issue is gone and I can work with version 7.5 of Libre Office. This issue still exist, when setting macOS appearance preference back to dark mode (or automatic during the evening) and the option in Tinker Tool to limit dark mode to menu and dock.
