Hi Konrad
Please keep one single issue per bug report, as it makes it very difficult to
action them.

Focusing on the vertical centering here, I tried the following steps:
1. New Calc document
2. Increase height of row 1 to see differences in vertical alignment
3. Input text in A1:S1
4. Select whole row and use Format > Align text > Center

Result: works as expected.

Tested with:
Version: 7.5.1.2 (X86_64) / LibreOffice Community
Build ID: fcbaee479e84c6cd81291587d2ee68cba099e129
CPU threads: 8; OS: Linux 5.15; UI render: default; VCL: gtk3
Locale: en-AU (en_AU.UTF-8); UI: en-US
Calc: threaded

Can you please provide precise steps in which vertical alignment does not work?
Perhaps starting with the file you shared?
