I see both in LibreOffice's Preferences – User Data – Encryption section: my GPG encryption keys and my GPG signing keys, whereas my preferred one has been preselected by me manually. As it should be. I see no problem, also not on my MacBook Pro Apple Silicon (M1 Pro).
