Makes sense since the integrated LO picker was removed in LO 7.5 for bug
151197.
KDE users seem to be able to use their DE's emoji picker, but GNOME's shortcut
for it only functions in shipped GTK apps (for example, works in Gedit).

Caolán, any thoughts on how doable that is?

On a German keyboard layout, shortcuts would be <Ctrl + Shift + ;> or <Ctrl +
.>, which are not assigned to anything by default.

Tested on Ubuntu 20.04 with GNOME 3.36.8 and:

Version: 7.5.5.2 (X86_64) / LibreOffice Community
Build ID: ca8fe7424262805f223b9a2334bc7181abbcbf5e
CPU threads: 8; OS: Linux 5.15; UI render: default; VCL: gtk3
Locale: en-AU (en_AU.UTF-8); UI: en-US
Calc: threaded
