Once removed, the modified style does work when applied to a new table.

This is a regression that started in libreoffice-5.3.0.0.alpha1 (checked with
linux-64-releases bibisect repo).

... and already tracked and bibisected in bug 113208, I just realise. Marking
as duplicate.
