For the test, could you:
- create a brand new file with just "test" in it
- save and close it
- reopen it and try to modify and save it again?
On which Windows version are you?
Do you have some specific antivirus (I mean not Windows Defender)?
if yes, could you disable it just some minutes to try again to modify your
files?
