What exactly do you mean by the "hide text" action?

In that sense, it's not a single-step action, and therefore is not suitable for
a keyboard shortcut.
There's already Ctrl + F2 to access the Fields dialog, in which such hidden
fields can be created.
Alternative would be to create a macro and associate a keyboard shortcut to it.

Or am I misundestanding?
