I did

Ah, that's by design, then. When soffice.bin detects upon start-up that the per-user information about bundled or shared extensions is outdated, it updates that information and then exits with a special exit code (81) that causes the wrapping process (on Linux that's oosplash, in turn started from soffice) to restart soffice.bin automatically.
