It's not obvious to me that any of the mail services you mentioned are any more freedom-respecting than Google's. For example, does one get any control over the software used on the server side, or over where and how the data (your emails) is processed? Google at least has a clear privacy policy, even if it's not the one we might want, and the option to collect and download all of your data.
