find & replace

Anyone know a nice simple schmick routine for parsing some text and doing a
find and replace??

I have say  - $text , it's got a few instances of the word 'beer' in it and
I want to replace that word with $coopers

Any ideas would be of a great help! else it's back to burrowing through the
cookbook..
