I find that in current master (see issue 3187, version 2.17.14), just
writing
\new Voice=bug { \set Staff.instrumentName=\incipit
\override Staff.InstrumentName.self-alignment-Y = ##f
\main }
works fine. It's also perfectly logical. So I'm remarking this as a
Documentation issue.
