Interpret &lt; &gt; and &lt;&lt; &gt;&gt; in \chordmode

There is no compelling reason not to do so, and having &lt; &gt; available
allows stuff like

\chordmode { \clef bass &lt;c&gt; c/e &lt;g,&gt; c/e }

or other ways of explicitly spelling out some not-really chord material.
